Methi malai chicken


Ingredients:

  1. Chicken-1/2 kg
  2. Yogurt-1/2 cup
  3. Ginger Garlic paste-1/2 tbsp
  4. Tomato ketch up-1/4 cup
  5. Turmeric Powder-1/2 tbsp
  6. Coriander Powder-1 tbsp
  7. Red chili powder-1 tbsp
  8. Black pepper powder-1/2 tbsp
  9. Green chilies-3
  10. Onion-2 (chopped)
  11. Dalchini- 1 inch
  12. Cloves-3
  13. Small cardamom-3
  14. Kasoori Methi-1 tbsp
  15. Nutmeg and mace powder-1 tbsp
  16. Mashed Cashew nuts-1 tbsp
  17. Oil-As per requirement
  18. Malai-1 tbsp
  19. Lime juice-1 tsp
  20. Salt-to taste
  21. Sugar-to taste
  22. Bay leaves-2

Process:


Marinate the chicken with lime juice and salt for half an hour.Heat oil in a pan.Fry the chicken and keep separately.Add dalchini and onion to the same oil and fry.After that add bay leaves,ginger garlic paste,red chili powder,turmeric powder,tomato ketch up and cook for few minutes.Then add fried chicken,coriander powder,yogurt,salt,sugar and mashed cashew nuts.Cook for 10 minutes on low flame.After the chicken gets boiled add kasoori methi,nutmeg and mace powder.Stir for few minutes and add malai after that.Put the lead on and cook for few minutes.Methi Malai Chicken is ready

Garnish with sleeted green chilies before serving.

Recipe of Palak (Spinach) Soup

Palak Soup

Ingredients:

  1. Palak (Spinach)-1 cup (chopped)
  2. Onion-1 (Chopped)
  3. Milk-3 cups
  4. Ghee/Veg oil-1 tbsp.
  5. Salt-To taste
  6. Black Pepper-To taste
  7. Corn Flour-1 tbsp
  8. Water-3 cups

Process:


Heat ghee or veg oil in a pan.Fry onion.Add chopped palak and fry for 2 minutes.Now in a separate bowl mix cornflour in small amount of milk.Then add the rest of the milk and water.Pour this mixture into palak.Put the lid on.Cook for sometime.Add salt and black pepper.

Palak soup is ready to serve.

[Cut sliced bread into small square pieces.Fry them in oil.Add these pieces in the hot soup before serving.]

Ingredients:


1.Potao-1 (medium size)
2.Vegetable Stock-As per requirement
3.Black Pepper Powder-1 tsp
4.Fresh cream-2 tbsp
5.Zucchini-1 (Finely chopped) optional
6.Onion Spinach-2 tsp (chopped)
7.Salt-To taste


Process:


Boil the potato and mash it.Add Vegetable stock as per requirement.Add water if required to make it thin.Now add salt and black pepper powder.After that add fresh cream and mix well.Keep the mixture in the refrigerator.After an hour take it out and add chopped Zucchini and onion spinach on the top.

Now Vichyssoise is ready to serve.

1.Paneer (Cottage Cheese)-1 cup (mashed)
2.Mayonnaise-6 tbsp
3.Onion-1 (chopped)
4.Chopped carrot-1/4 cup
5.Green peas-1/4 cup
6.Chopped Coriander leaves-2 tbsp
7.Salt-To taste
8.Black pepper-As per requirement
9.Roasted peanut dust-1/2 cup


Process:


Mix all the ingredients except peanut dust and make dough.Keep the dough in the fridge for one hour.After one hour take it out.Now make balls from the dough.Apply roasted peanut dust to the surface of the balls.Serve it with sauce of your choice.You can fry the balls if u want it to be hot and crispy.

2.Condensed Milk-3 tbsp.

Process:


Grind the chikoos.Now mix condensed milk and cream with it.Add chocolate sauce first in the serving glass.Then add the chikoo mixture.Keep it in the refrigerator for atleast 3 hours.Add honey on top before serving.You can garnish it with grated chocolate as well.

1.Milk-500ml
2.Chocolate powder-2 tbsp
3.Khoya kheer-100 gms.
4.Sugar-50 gms.
5.Raisins-5
6.Cashews-3 (dust) and few whole cashews.
7.Salt-A pinch
8.Ice cubes-As per requirement


Process:


Separate one cup of milk.Ad chocolate powder,salt and sugar in it.Blend the mixture well.Now put the rest of the milk on heat and bring it to boil.After that add khoya kheer and keep stirring.Add sugar to it.When the mixture turns out to be thick,remove from heat and let it cool.Add the cashew dust.Malai is ready.Now in a glass add ice cubes and pour the chocolate milk.On top of that add the malai.Add whole cashews,raisins and chocolate powder for garnishing.Choco Malai is ready to serve.

1.Green mango-1 (Sliced and peeled)
2.Rohu fish-Cut into 6 pieces
3.Mustard oil-as per requirement
4.Turmeric powder-2 tsp

7.Panch foron-1/4 teaspoon
8.Green Chilies-5

Process:


Marinate the mango slices with salt and turmeric powder.Marinate the fish with turmeric and salt as well.Heat oil in a pan.Fry the fish lightly and keep aside.Now add panch foron in the same oil.When it stops splattering add mango slices,turmeric powder,salt,sugar and green chilies.Cook for few minutes.Then add water to it.when it starts boiling add the fish.Put the lid on and cook for another 3 minutes.Remove from heat.

Rohu fish in Mango Curry is ready.serve it with hot steamed rice.

1.Tiger Prawn-500 gms (separate the heads and slit the body)
2.Green Mangoes-2 (peeled and sliced)

Process:


Marinate the prawns with salt and lemon juice for 15 minutes.Boil the mango slices and make pulp out of those.Now heat oil in a fry pan.Add dried red chilies,cumin seeds and bay leaves.When the spices stop splattering add the prawns.Fry for 3 minutes then put the lid on.After 1 minute add the mango pulp,salt and sugar.Cook till the prawns are done properly.Remove from heat when done.

Prawn in Mango curry is ready to serve.

2.Green Mango-Half (Paste)

7.Mint Leaves(Pudina Pata)-Few
8.Green Mango-1/4 (grated)
9.Pan fried Cumin and coriander powder-1 tbsp

Process:


Grind grated mango,coriander leaves,mint leaves and green chilies together and make a paste.Marinate the chicken with mango paste (previously made),ginger paste,garlic paste and salt.Heat oil in the pan.Add chopped onion and fry till golden.After that add the marinated chicken.Keep stirring.After few minutes add the mango-coriander leaves-mint leaves and green chili paste.Cook till the chicken starts releasing oil.No need to add water as the chicken itself will form the gravy.When the chicken gets boiled and cooked properly, add pan fried cumin and coriander powder.Remove from heat.

Mango Chicken is ready.Garnish with fresh coriander leaves and serve with Rice/Pulao.

1.Green sweet mango-2 (finely grated)
2.Poppy seeds(Posto)-2 tbsp
3.White mustard seeds-1 tsp
4.Peanuts-5

8.Mustard oil-As per requirement
9.Black Cumin seeds-a pinch
10.Banana Leaves-As per requirement

Process:


Grind poppy seeds,mustard seeds,peanuts and green chilies together.Add grated mango,black cumin seeds and mustard oil to this paste.now add salt and sugar.Mix well.Cut the banana leaves into square pieces.Coat one side with mustard oil.Now put some mango paste on the banana leaf and tie well with a string.Repeat this process and make some more paturis with the remaining mango paste.Heat oil in a fry pan add the paturis.Put the lid on and let it cook for 10 minutes on low flame.Repeat the same step for frying the other side as well.Finally remove from heat.

Mango Paturi is ready.serve with hot steamed rice.

Process:


Heat milk in a pan.Add milk powder and keep stirring.Boil till the milk becomes half of it's actual quantity.Add sugar.Mix well.Remove from heat and let it cool.After that add the fruits.Drizzle honey from the top.Garnish with pomegranates and orange segments.

Fruit Payesh is ready to serve.You can use fruits of your choice for this recipe.

Process:


Marinate the fish with lemon juice for 10 minutes.Now in a steel pot mix kasundi,tomato Ketch up,fish sauce,hickory smoked sauce,refined oil,black pepper powder and salt together.Add the marinated fish in this mixture and keep aside for another 15 minutes.Wrap the fish with a foil paper.Preheat the microwave oven in 180 degree Celsius.Cook the marinated fish in the oven for 18 minute.Bring it out and let it cool.

Marinate the mutton with yogurt,ginger paste,garlic paste,green chili paste,garam masala powder and few drops of mustard oil.Keep it into the refrigerator for an hour.Heat oil in a pan.Add Onion paste and cook till it turns golden.Then add the marinated mutton.Cook for 15 minutes on low flame.Add some water if required.Mix the mustard paste with water in a separate pot.When the mutton starts releasing oil,add the mustard paste.Add salt and keep stirring.Put the lid on.Cook till the mutton gets boiled properly.After that remove from heat.

1.Eggs-4
2.Onion-1 (large,Chopped)
3.Ginger Garlic paste-2 tbsp

13.Aamchoor powder-1 tsp.

Process:


Hard boil the eggs.Meanwhile grind chopped onion,tomato and green chilies together to form a smooth paste.Heat oil in the pan and add the mixture.Cook for sometime and add the ginger garlic paste.fry for another 5 minutes.Now add all the spices.Mix well.After 2 minutes add two cups of water and salt to taste.Put the lid on and simmer it till the gravy is done.On another pan heat some oil.Add the boiled eggs along with turmeric powder and red chili powder.Fry for sometime.Now add the eggs into the gravy and let it cook for another 5 minutes on medium flame.Remove from heat when done.

Spicy Egg Curry is ready.Sprinkle the aamchoor powder from the top.Serve with Rice.

Ingredients:


1.Bread Slices-8
2.Boiled Potato-1 (medium sized)
3.Carrot-1 (chopped)
4.Onion-1 (finely chopped)
5.Peas-Few
6.Ginger Garlic paste-1 tbsp.
7.Turmeric Powder-1 tsp
8.Red Chili Powder-1 tsp
9.Garam Masala-1/2 tsp
10.Chat Masala-1 tsp
11.Oil-As per Requirement
12.Coriander Leaves-1 tbsp (Chopped)
13.Salt-To taste
14.Cumin Powder-1 tsp
15.Coriander Powder-1 tsp
16.Butter-2 tbsp

Process:

Cut the sides of the bread slices.Roll them slightly with a chapati roller.Then cover them with wet soft cloth for few minutes.Meanwhile heat oil in a pan.Saute the onion and ginger garlic paste for 5 minutes.Add all the vegetables along with the spices.add salt to taste and a bit of water for the spices to mix well.Now cook with the lid on till the vegetables are done well.Remove from heat.Now mash the vegetables.add this mixture to the bread slices and make rolls.Preheat the oven to 180 degrees.Coat the bread rolls with butter and bake till golden brown.The time of baking differs from oven to oven.So keep on checking.When Done garnish with coriander leaves.

Serve it with Chutney of your choice.You can use other vegetables,paneer,chicken or anything of your choice for stuffing.

Recipe of Saboodana Kheer

Ingredients:


1.Saboodana (Tapioca)-1 cup
2.Ghee-1 tbsp
3.Milk-1 liter.
4.Sugar-1/2 cup
5.Cardamom pods-4
6.Saffron-a pinch
7.Cashews-few
8.Almonds-few
9.Raisins-few
10.Water-As per requirement.

Process:


Soak saffron in 1/4 cup of warm milk for sometime.Soak Saboodana in water for 20 minutes.Heat ghee in a pan and roast the cashews and almonds.Keep aside.Now add soaked saboodana in the pan after draining the water.Add some sugar.Roast for a few minutes.Now slowly add milk and keep on stirring.Cook until saboodanas become swollen and translucent.Add the rest of the sugar and cardamom pods.After that add the saffron with the milk.Mix it well and cook till the mixture turns thick.Remove from heat.

Saboodana Kheer is ready.Garnish with roasted almonds,cashews and raisins before serving.

Recipe of Bharwan Karela (Stuffed bitter Gourd)

Ingredients:

1.Karela-4
2.Onions-3 (Chopped)
3.Ginger Garlic paste-1 tbsp.
4.Turmeric powder-1 tsp.
5.Red Chili powder-1 tsp.
6.Fennel Seeds-1 tbsp.
7.Coriander powder-1 tsp.
8.cumin powder-1 tsp.
9.Tomatoes-3 (Chopped)
10.Salt-To taste
11.Curry Leaves-5
12.Black Mustard Seeds-1 tsp
13.Aamchoor powder-1 tsp
14.Oil-As per requirement

Process:


Wash the karelas first.Then cut both ends(top and tail).Slit the karelas lengthwise leaving 1/2'' from both the ends.Make sure it does not separate.Scoop out all the seeds with the help of a spoon carefully and discard the seeds.In a pot put some water and salt.Now add the karelas and bring it to boil till the karelas' skins begin to get soft.Then remove from heat and drain the water.Keep the karelas aside to cool.

Now heat oil in a pan.Add fennel seeds,mustard seeds and curry leaves.When they stop spluttering add onions.Cook till they turn soft.Add ginger garlic paste and saute for another one minute.After that add the tomatoes and cook till they form a smooth pulp.Now add all the spices and mix well.Cook for minimum 8 minutes.Stir frequently to prevent from burning.when the mixture gets ready turn off the fire and let it cool.Now Stuff the karelas with this mixture.Tie them with strings so that the mixture doesn't come out.Heat oil in a pan and deep fry the karelas.

Bharwan Karela is ready.You can serve it with Rice and dal of your choice.

Ingredients:


1.Mutton keema-500 gms.
2.Onions-2 (chopped)
3.Tomato-1 (chopped)
4.Ginger garlic paste-2 tbsp
5.Cumin powder-1 tbsp
6.Coriander powder-1 tbsp
7.Red Chili powder-1 tbsp.
8.Turmeric powder-a pinch'
9.Garam Masala-1 tsp
10.Coriander leaves-few (Chopped)
11.Salt-To taste
12.Ghee-2 tbsp


Process:


Heat 1 tbsp ghee in a pan on medium flame.Add onion and fry till they turn brown.After that add ginger garlic paste and cook for 3 minutes till the raw smell is gone.Add the tomato and cook till it's half done.Now add mutton keemas and all the spices.Add salt to taste.Add little bit of water and cook till the meat is done on low flame.It may take around 8 minutes.Remove from heat.Drizzle the remaining ghee and garnish with chopped coriander leaves.

Mutton Keema curry is ready.serve it with bread or Rice.

Ingredients:


1.White Sesame-100 gms.
2.Rice Flour-As per requirement
3.Salt-To taste
4.Green Chilies-3
5.Oil-As per requirement
6.Grated ginger-1/2 tsp.

Process:


Fry the Sesame in dry pan(without oil) for 3 minutes.Now let it come to the normal temperature.After that grind it to make a paste.But don't make it too smooth.Add rice flour,salt,chilies,grated ginger and li'l bit of water with the paste.Make a dough and keep it aside for an hour.Now make vadas from the mixture.Heat oil in a fry pan and deep fry the vadas.

Til Vada is ready to serve.

Process:


Firstly boil water.Now soak the tomatoes in the boiled water for sometimes.Now separate the pulp from the tomatoes.Now mix salt,mint leaves,sugar powder with the pulp.Blend the mixture together.Now keep it in the refrigerator for sometime.Before serving add the ice cubes.

Ingredients:


1.Broccoli-1/2 cup
2.Carrot-1/4 cup

Process:


Firstly boil broccoli and baby corn.Heat oil in a fry pan.fry grated garlic,chopped onion and grated ginger.Add carrot,capsicum,tomato and french beans.cook for 3 minutes.Now add broccoli and baby corn.Cook for 5 minutes.Now add sweet corn and vegetable stock.Put the lid on.Let it boil.After that add chili garlic sauce,salt,sugar and black pepper powder.Now add lemon sauce and cook for 5 minutes on low flame.

Broccoli,baby corn in lemon sauce is ready now.Serve it with bread roll.

[NOTE: To make lemon sauce,mix cornflour and sugar in cold water.Now slowly add the mixture in boiling water.when it turns thick,remove from heat.Now add butter and Lemon juice.Lemon Sauce is ready.]

Ingredients:


1.Chicken-800 gms.
2.Onion-2(finely chopped)
3.Garlic Paste-1 tsp.
4.Chicken stock-2 cups
5.Honey-2 tbsp.
6.Parsley leaves-2 tbsp.
7.Black pepper powder-1 tsp.
8.Lemon-2

Process:


Heat oil in a fry pan.Saute the chicken lightly.When it turns brown add onion,garlic paste.Stir for 2 minutes.Then add chicken stock,lemon juice,honey and 1 tbsp parsley leaves.let it boil for minimum half an hour.Stir occasionally.Add salt.After the chicken is done remove it from heat.Add black pepper powder and the remaining parsley leaves.

Honey lemon chicken is ready to serve.

Process:


Cut the watermelon into small pieces and separate the seeds.Now blend the pieces with grated ginger,coriander leaves,salt,sugar,lemon juice,roasted cumin powder and apple juice.Make a pulp.Now cool the mixture.

2.Bengal gram flour-2tbsp.

Process:


Soak rice flakes into water for 5 minutes and drain the water.make a dough of soaked rice flakes,bengal gram flour,cumin powder,coriander powder,black pepper powder and salt.Now make tikkis from the dough.Heat oil in a fry pan and fry the tikkis till they turn brown.

Serve it hot with mint or tomato chutney.

Process:


Marinade the fishes with salt,turmeric powder,coriander powder,cumin powder,lemon juice,ginger garlic paste and green chili paste for an hour.Now in a bowl make a batter of all purpose flour,corn flower,baking soda,black cumin seeds,poppy seeds,salt,red chili powder and water.Now heat oil in a fry pan.Dip the fishes in the batter one by one and deep fry till both sides turn brown.

Enjoy this crispy topse fry as an appetizer or serve it with hot rice and dal.

1.Boneless Mutton-500gms.
2.Carrot-1 (cut into medium sized pieces)
3.Potato-2 (cut into medium pieces)

5.Tomato-1 (cut into four pieces)
6.Bay leaves-2
7.Onion-1 (paste)
8.Ginger garlic paste-3 tbsp.
9.Black pepper powder-1 tbsp.
10.Beans-1 cup (chopped)

Process:


Boil the mutton in a pressure cooker with salt.Keep the stock aside.Now heat oil in a pan.Add bay leaves.After that add onion paste and ginger garlic paste and fry till it turns golden brown.Now add the vegetables.Add salt to taste and black pepper powder.Cook for 5 minutes.Now add the mutton and cook for 10 minutes.Finally add the mutton stock,sugar and green chilies.Put the lid on and cook till the vegetables are done.remove from heat and garnish with coriander leaves.

Serve it with hot steamed rice.

Ingredients:


1.Cooked Rice-1 cup (cooked such that the grains are separated)
2.Bengal Gram-1 tbsp.
3.Black gram (Urad Dal)-1 tbsp.
4.Grated Coconut-3 cups
5.Red chilies-3
6.Green chilies-2
7.Oil-1 tbsp.
8.Mustard seeds-1 tsp.
9.curry leaves-few
10.Asafoetida Powder(hing)-A pinch
11.Cashew Nuts-10
12.Salt-To taste

Process:


Heat oil in a pan.Add mustard seeds.When they start popping add red chilies,curry leaves,cashew nuts and asafoetida powder and bengal gram.after 2 minutes add black gram and roast well till the mixture turns golden brown.Now add grated coconut and saute for few minutes till it turns slightly brown.Now add salt as per requirement.After that add the cooked rice and green chilies.Mix well.Remove from heat.

Yummy coconut rice is ready.You can serve it with papad or any curry of your choice.

3.Mustard seeds-1 tsp.
4.Coriander powder-1 tsp

Process:


Heat oil in a pan.add mustard seeds and green chilies.When they stop spluttering add turmeric powder and coriander powder.Remove the pan from heat.Add cooked rice,salt and squeeze the lemons.Mix well.Garnish with coriander leaves.

Lemon rice is ready.Serve with Raita.

3.Ginger garlic paste-3 tbsp.
4.Yogurt-1 cup
5.Black cumin-1 tbsp.
6.Turmeric powder-2 tbsp.
7.Red Chili Powder-2 tbsp
8.Green Chilies-2
9.Mustard Oil-4 tbsp.
10.Bay leaves-3
11.Salt-To taste
12.Milk powder-2 tbsp.
13.Water-As required

Process:


Marinate the fish with turmeric powder,chili powder and salt for 15 minutes.Mix yogurt,onion paste,ginger garlic paste and salt together and keep aside.Now heat oil in a pan.Fry the fishes and keep aside.Now add black cumin and bay leaves in the same oil.when they stop splattering add the mixture of yogurt.cook for 10 minutes in low flame with the lid on.Add the fishes and cook for another five minutes.Now Mix the milk powder with 1 cup water and add it to the fish curry.Add green chilies and salt.Saute for 5 minutes.

Your Koi Rasana is ready.Serve it with Hot Rice.I learnt this dish from my mom.Cook this simple dish at home.I hope you all will love it.

Process:

In a bowl combine curds with coriander powder,chili powder,besan,salt and keep aside.Now heat oil in a fry pan and add cumin seeds,mustard seeds and curry leaves.When they stop splattering add chopped onion and ginger garlic paste.Fry till it turns golden brown.Now add the vindis.Add garam masala power and salt to taste.After cooking for 3 minutes add the curd mixture.stir for 3-4 minutes.Then add 1 cup water and bring it to boil by covering with a lid on low flame.Simmer for few minutes until the vindis are soft.Remove from heat.

Your Dahi Vindi is ready to serve.It's a Rajasthani delicacy which is yummy and also low in calories.

Ingredients:


1.Whole black lentils(Urad Dal)-2 cups
2.Kidney Beans-1/2 cup
3.Cumin seeds-2 tbsp.
4.Ginger Garlic paste-2 tbsp.
5.Coriander powder-1 tbsp.
6.Cardamom powder-1 tbsp.
7.Onion-1 (Chopped)
8.Garam masala powder-1 tbsp.
9.Red Chili Powder-1 tbsp.
10.Tomatoes-2 (chopped)
11.Turmeric Powder-1 tbsp.
12.Bay leaves-2
13.Cloves-3
14.Dried Fenugreek leaves(Kasuri Methi)-1 tbsp.
15.Fresh Cream-1 cup
16.Oil-1 tbsp.
17.Butter-3 tbsp.
18.Salt-To taste
19.Chilies-2

Process:


Soak the lentils and Kidney beans overnight.Now in a pressure cooker cook them in the same water with salt and red chili powder until mushy.Now in a pan heat oil and 2 tbsp butter.Add bay leaves,cloves and cumin seeds.when it starts crackling add chopped onion and fry it till it turns golden brown.Then add ginger garlic paste,tomatoes,turmeric powder,coriander powder,salt and chilies.saute till the mixture is well mashed.then add the mixture of lentils and kidney beans.Crush them well.Then gradually add the liquid in which the lentils were cooked.Reduce the flame and cover the pan with a lid.Cook for minimum 15 minutes.Stir occasionally.After that add the fenugreek leavesalong with cardamom powder and mix well.Add fresh cream and garam masala powder and let it simmer for another 5 minutes.Remove from heat.

Your yummy Dal makhani is ready.Add the rest 1 tbsp butter on the top and serve with Roti,Paratha or Nun.

Recipe of Basanti Pulao

Basanti Pulao


Ingredients:

1.Basmati rice-1.5 cup
2.Cashew Nuts-1/4 cup
3.Raisins-1/4 cup
4.Ghee-4 tbsp.
5.Grated Ginger 1tsp.
6.Turmeric powder-1tsp
7.Bay leaves-2
8.Black Cumin-1tsp.
9.Green cardamoms-3
10.Cinnamon-1 stick
11.Cloves-6
12.Milk-2 tbsp
13.Saffron-A pinch
14.Salt-To taste
15.Sugar-3 tbsp
16.Water-2 cups


Process:


Soak rice in water for 30 minutes.Wash well and drain the water.Dry it for minimum 1 hour by spreading out on a sheet.Now smear the rice with turmeric powder,salt and 1 tbsp ghee.In a bowl soak saffron in lukewarm milk and keep aside.In a skillet heat 1 tbsp ghee and fry cashew nuts and raising till these turn brown.Keep aside.Now add bay leaves,Cloves,Cinnamon stick,Green cardamom and black cumin and fry for 1 minute.Let it splutter.Add rice and grated ginger.Cook for 4 minutes.Stir well.You can feel the aroma.Add soaked saffron and cook for 2 minutes.Add water,salt,Sugar and mix gently.Now cover it with a lid and cook for 10 minutes.Now remove it from the heat,drizzle the rest of the ghee and cover it up.keep for 15 minutes.Let it get cooked in the vapour.

Your Basanti Pulao is ready.Serve it with chicken curry,mutton curry or spicy vegetable curry.

Recipe of Fried Peas

Fried Peas

Ingredients:


1.Green peas (dried and soaked overnight in water and pinch of cooking soda)-1cup
2.Oil-2tbsp.
3.Coriander Powder-1tsp.
4.Cumin Powder-1tsp.
5.Aamchoor Powder-1tsp.
6.Black Pepper-1tsp.
7.Red Pepper-1tsp.
8.Paprika-1tsp.


Process:


Drain the water from the peas.Heat oil in a fry pan.Add the peas and cover the pan with lid for 10 minutes on high flame.Now remove the lid.Add Cumin powder,coriander powder,red pepper and paprika.Reduce the flame and fry the peas till crispy.stir constantly.When crisp remove the peas and mix aamchur powder and black pepper.Cool and store in an air tight container.

This is an easy low fat recipe.Squeeze lemon Juice before serving.

Recipe of Easy Spicy Mutton Curry

SPICY MUTTON CURRY




Ingredients:


1.Mutton-1kg.
2.Yogurt-400gms.
3.Ginger Garlic Paste-4tbsp
4.Black Peppercorns-3tbsp.
5.Kashmiri Red Chili Powder-4tbsp.
6.Ghee-5tbsp.
7.Onion Paste-4tbsp.
8.Salt-to taste
9.Sugar-3tbsp.
10.Garam Masala Powder-2tbsp.


Process:


Boil the mutton and keep the stock aside.Add 3 tbsp ghee in a pan and heat.Then add black peppercorns and 2tbsp sugar.After that add the onion paste and the ginger garlic paste and cook for 5 minutes.Now add the mutton and add kashmiri red chili powder to it. Fry till it turns red.Take a separate bowl.Grind the yogurt and 1 tbsp sugar together.Now add the mixture to the pan and let it cook for 10 minutes with the lid on.Stir as required.Now add 2 cups mutton stock and let it cook for another 10 minutes with the lid on and on medium flame.As the mutton gets cooked remove it from heat and drizzle the rest of the ghee on top.

Your easy spicy mutton curry is ready.Serve it with Rice.

Dhokla 





Ingredients:

1.Gram flour (besan)-2 cup
2.Semolina (suji)-2tsp. 
3.Baking soda powder-1tsp.
4.Sugar-1/2tsp. 
5.Green chilis (hari mirch)-5

6.Lemon-1
7.Mustard seeds-1tsp.
8.Curry leaves-10
9.Water-As required

10.Salt-To taste
11.Oil-1tbsp.
12.Grated coconut-2tsp.

13.Coriander leaves-1 bunch finely chopped.

Process:


Heat water in a pressure cooker and place sieve (jaali) on it.Now add baking soda powder.Mix gram flour, semolina and 1 cup water in a bowl.Grease another container.Immediately pour the mixture in the greased container.Place it on the sieve. Now put the lid on the cooker and remove the whistle of the cooker.Let it cook at high flame for atleast 15 minutes.Take the dhoklas out of the container.Once it is cooled, cut into pieces.Heat oil in a pan and crackle mustard seeds. Then add curry leaves.Finely chop green chilies.Pour this on dhoklas.Add 2 cup water, sugar and lemon juice in a container and put all dhoklas in it.After 5 minutes drain extra water.Garnish with finely chopped Coriander leaves and grated coconut.

Your Dhokla is ready.Serve it with Imli chutney.

Ingredients:


1.Rui Maach (Rohu Fish)-1 kg.(cut into medium sized pieces)
2.Yogurt-200gms.
3.Ginger Paste-1tbsp.
4.Garlic Paste-1tbsp.
5.Onions-2  (Finely chop one of those and make a paste of the other)
6.Turmeric powder-1tbsp.
7.Red Chili Powder-1tbsp.
8.Mustard Oil-4tbsp.
9.Cumin seeds-1tbsp.
10.Green Cardamoms-3
11.Bay leaves-2
12.Cloves-3
13.Cinnamon-1 stick
14.Black peppercorns-5
15.Green Chilies-4
16.Salt-To taste


Process:


Mix the yogurt with the onion paste, red chili powder, turmeric, ginger and garlic pastes and blend. Now add the fish pieces to this and gently mix to coat well. Marinate for 2 hours.Heat 3 tbsp mustard oil in a pan.Add cumin seeds,bay leaves,cloves,cardamom,Cinnamon,peppercorns and fry for 30 seconds.Add the chopped onion and fry for 5 minutes.Add the fish and the marinade,mix gently but thoroughly.Season with salt as required.add the slit green chilies.Take care that the pieces of the fish do not break.Let it just cook for atleast 8 minutes.chck whether the fish has become tender if not add little bit of water to it.Cook till the fish is done.A great smell from the kitchen tells you that the dish is done.Now remove it from the heat and drizzle the remaining mustard oil over the top.

Your Doi Rui is ready.Serve it with steamed hot Rice.
